Tortellini Soup
This soup is a go to in my family. It is good in summer or winter, it is healthy, and light, and delicious! I looked online to see if it’s already out there and I couldn’t find anything the same.
We served this soup at my wedding!
You can make it ahead and freeze it and then add the tortellinis if you want. You can substitute garden tomatoes for the can of diced tomatoes for even better flavor. Serve it with good bread and oil and balsamic for an easy meal.

TORTELLINI SOU
Serves 6
Cook Time: 45 minutes - 1 hour
1 lb. Italian Sausage
1 cup chopped onion
2 cloves minced garlic
5 cups chicken broth
1/2 cup water
1/2 cup red cooking wine
1 can peeled cut tomatoes
18 oz. can tomato sauce
1/2 tsp. basil
1/2 tsp. oregano
3 T. parsley
1 medium green pepper
1 1/2 small zucchini
1 package fresh tortellini
Brown and drain sausage in a big pot. Saute chopped onion and garlic with meat. Add all but the last four ingredients. Bring to a boil. Simmer for half an hour. Add the last four ingredients one at a time in the order they are listed. Simmer until ready to serve. Serve with parmesan cheese and pugliese bread.
* It may be a little thick so just add broth or water as needed.
