Beef Stroganoff Recipe

This recipe is a twist on an old classic. I have never like the soupy gloppy stroganoffs so I set out to create one that is flavorful and delicious. This has all the charm and flavor of an old-fashioned beef stroganoff but with a creamy sauce that will knock your socks off. I hope you will love it as much as I, and my family, do!

Total Time: 40 minutes

Servings: Enough for 4-6 people

Ingredients

1 pkg fettuccine noodles

1 sirloin steak (16 oz)

1/2 tsp oregano

1/2 tsp parsley

1/2 cup cooking wine

3 T olive oil

1 small chopped onion

1 pkg lightly chopped mushroom

4 T butter

1 T flour

1/2 cup chicken broth

1 cup heavy cream

Directions

1. Chop the onion and mushroom.

2. Pat the meat dry with a paper towel. Cut into small cubes or strips.

3. Heat 3 tablespoons of olive oil over the stove in a wide brimmed pan. When the oil is hot (when a drop of water sizzles when it hits it) put the meat in. Coat the meat with the herbs. Sauté on high heat until the meat is nice and crispy. Lift the meat from the pan and set aside with foil so it stays warm. 

4. Using the same pan, turn your heat down a little to med-low. Pour in 1/2 cup of red cooking wine. Once the wine is at a simmer add the chopped onion and mushroom. Stir occasionally until the mushrooms are tender and have absorbed most of the wine. Watch the heat so the wine doesn’t get to a fast boil and burn.

5. While the mushrooms and onions are cooking, cook the package of fettuccine noodles according to the directions on the package.

6. Once the mushroom mix is done set it aside with the meat. Using the same pan, combine the butter and flour. When the butter foams add the chicken broth and allow to thicken. Once it’s started to thicken add the cream and cheese. Keep the heat low enough that the cream and cheese don’t burn but high enough to allow the cheese to melt and thicken the sauce.

7. Once the sauce is thickened add the mushroom mixture and meat to the sauce letting it all warm up together. (You can keep the meat separate from the sauce if you would like.)

8. Drain the pasta noodles well and pour the sauce over with the meat and noodles and enjoy!
